I get a daily Hungry Girl e-newsletter (if you don’t get them you should!!! TONS of great tips and easy recipes!!) - a recent newsletter was A Salute to Spaghetti Squash. I LOVE spaghetti squash and I love all the fun ways you can incorporate it into your recipes and a great way it is to get another serving of veggies in. I have replaced spaghetti squash in place of pasta and starchy things in a lot of my meals. It only has about 40 calories per cup, has lots of fiber in it, and doesn’t have all the carbs that are in pasta.
Its such an easy veggie to prepare and in this newsletter she explains the different ways to cook it and tons of cool recipe ideas. I love to microwave it (mainly because its quicker!) and then I salt and pepper it and add it to everything. She also has tips on if you’ve never eaten it before how to slowly try it in your recipes.
